Directions:

  • Heat oil in a pot. Add the garlic and onion and cook for a few minutes until lightly browned and aromatic.
  • Add the carrots and butternut squash and saute for 2 minutes. Then add the vegetable stock along with tomatoes and bring it to a boil.
  • Now, add the spinach and flavor with oregano, thyme, and rosemary. Add pepper and salt to taste.
  • Boil the soup on low heat and let the soup simmer until the vegetables are fork-tender. Serve hot.

Ingredients:

Coconut oil, extra firm tofu, ginger, lemongrass, vegetable broth, coconut milk, lime juice, cooked rice, soy sauce, honey, toasted sesame oil, onion, carrots, scallions, garlic.

Directions:

  • Mix sesame oil, soy sauce, honey together. Now, coat the tofu pieces with this mixture.
  • Add 1 tsp coconut oil in a pan and lightly brown the tofu. Keep them aside.
  • Now, heat 1 tsp oil to the pan and add onions and carrots.
  • Add half of the chopped garlic, ginger, scallions, and lemongrass.
  • Add in the vegetable stock and coconut milk and let it boil.
  • Add salt, pepper, and lime juice. Now, put rice in a soup bowl and pour the soup over it and top it with the rest of the scallions and tofu. Your tasty Thai Soup with Tofu and Rice is ready!

Ingredients:

Olive oil, sausage, carrots, onion, celery, garlic, chicken broth, water, dried parsley, rosemary, oregano, salt, black pepper, kale, dried white beans, cheese.

Directions:

  • Heat olive oil in a pan. Add sausage and cook. Remove from pan.
  • Cook onions, chopped carrots, celery, garlic in the same pan without removing any of the oil or fats. 
  • Then add the chicken, water, parsley, rosemary, and oregano.
  • Boil and leave it for 10 minutes. Add salt and pepper to taste.
  • Add chopped kale, cooked sausage, and dried white beans to the pot and boil until it is tender.
  • While serving, top it with grated parmesan cheese.

Ingredients:

Olive oil, chicken, chicken stock onion, garlic, black pepper, parsley, carrots, celery, potatoes, beef, bay leaves, tomatoes, salt.

Directions:

  • Heat the oil. Add the meat pieces and cook until well browned. Shift the meat to a plate.
  • In the same pot, mix the onions, garlic, carrots, celery and potatoes. Cook it for 3 minutes.
  • Add the cooked meat and chicken stock and bring it to a boil. Garnish it with dry parsley.

Ingredients (For chicken):

Chicken, olive oil, oregano, salt, ground black pepper, garlic powder, ground cumin, chili powder, and cayenne pepper.

Directions:
